Italian Creamy Spinach

1 medium onion, diced
3 cloves garlic, crushed
2 tsp olive oil
400g can diced tomatoes
120g baby spinach leaves, roughly chopped
1 tsp dried oregano
pinch each salt and pepper
150g lite sour cream
small handful pine nuts, optional
Hints & Tips
Alternatives: To increase the protein and omega content, add a can of salmon or tuna.
Value added tip: Canned chickpeas or lentils can
be added for extra protein and fibre, and are an economical way to increase the quantity.
1. Cook pasta as per packet directions.
2. Sauté onion and garlic in the oil, until softened. Add tomatoes.
3. Add spinach, oregano and seasonings. When spinach begins to wilt, stir in the sour cream.
4. Stir into the cooked pasta. Served garnished with pine nuts, if using.
