Susan Hall’s Tomato Soup

Ingredients

1 onion
2 tbsp oil
2 cloves garlic
1 slice of bread
1 tsp sugar
1 tsp green herb or chicken stock
½ tsp paprika
1 cup water
750g chopped tomatoes (skinned if desired)
¼ tsp salt
Herbs & Spices
Pinch cumin
Black pepper
Basil
Thyme
Oregano
Marjoram
½ tsp chilli sauce

This recipe because is low in fat.

Cooking Instructions

Chop the onion and garlic and cook in the oil in a large saucepan. Break the bread and add to the pan. Then add the sugar, stock, paprika and water and simmer for 5 minutes. Add the tomatoes and salt and cook gently for 5 more minutes. Then add the herbs and spices to taste. Finally, mash or puree, or leave as is and serve.
