Edith Ieremia’s Granny’s Apple Soup

Ingredients

4 sweet apples
1 litre chicken stock
1 dessert spoon of margarine or oil
2 spring onions
1 clove of garlic
2cm cube of fresh ginger, grated
2 tsp curry powder (not too hot)
Lemon juice
Chives
Nutmeg
Pepper / salt

Hints & Tips

Cooking Instructions

Chop up sweet apples and spring onions. Melt butter in a large saucepan and add the apples and spring onions. Cook until golden. Add the curry powder, garlic, and ginger and cook for two minutes. Add stock. Cook for 10 minutes until all is soft. Blend it smooth. Bring it to taste with a pinch of nutmeg, pepper and lemon juice. Serve sprinkled with chives – lovely with crusty bread.
