Jill Westenra’s Easy Kumara Soup

Ingredients

approx 800g kumara (3 med/large kumaras)
2 onions
4 cloves garlic
grated ginger root (2 rounded teaspoons)
2 tsp cumin powder
1 tsp iodised salt
ground pepper
1 dessert spoon olive oil
5 cups water

Hints & Tips

Soup in winter is very warming and easy to eat!

Cooking Instructions

In a large pot, saute chopped onion in oil for approx one minute being careful not to brown. Add chopped garlic, grated ginger, cumin, salt and pepper and cook for one further minute. Add cubed kumara and water and cook until kumara is soft. Puree.
