Chilli Beef Burritos

Ingredients
1 tsp rice bran oil or canola oil
300g beef mince
390g can red kidney beans, drained
400g can Mexican fl avoured tomatoes
6-8 burritos (1-2 per person)
1 avocado, mashed
150g lite sour cream
1/2 cup grated Edam cheese
1 cup shredded lettuce
2 tomatoes, sliced
Hints & Tips
Health tip: Draining off the liquid after browning the mince reduces the level of fat in the meal.
Alternatives: If avocados are not in season, use hummus. If you don’t have any burritos, use the mixture in pita bread pockets or over a baked potato.
Cooking Instructions
1. Heat the oil in a frying pan. Cook mince until browned. Drain off any liquid.
2. Add kidney beans and tomatoes. Cook for 10-15 minutes.
3. Heat burritos as per packet directions.
4. Spread avocado onto burritos then add mince mixture and other ingredients.
5. Roll up burritos and cut in half to make them easier to eat.
6. Serve with extra salad ingredients.
