Mediterrranean Kumara Chips
Kumara done a little different. Try them at your next family gathering.
Ingredients
4 medium kumara (red, gold or orange)
3 Tbsp olive oil
1/4 cup black olives
1/4 cup sun-dried or semi-dried tomatoes
salt & freshly ground black pepper
rosemary sprigs

Cooking Instructions
Peel the kumara and cut into thick wedges. Heat olive oil in a frying pan and brown each side on a fairly high heat. Reduce heat, cover and cook for a further 5 minutes, turning the wedges occasionally.
Remove stones from the olives. Chop the olives and tomatoes into small pieces and add to the wedges along with the salt and pepper and rosemary sprigs. Continue to cook until kumara wedges are tender. Remove the rosemary sprigs and serve.
Top with fresh rosemary as a garnish. Serves 4.
