Pumpkin Pasta
Put the leftovers, (if there are any) in a plastic container and take to work for lunch, yummy!
Ingredients
600g pumpkin
1 large onion
1/2 cup water
3 bay leaves
freshly ground black pepper
1/4 tsp ground nutmeg
1/2 cup light sour cream
6 slices salami
1/4 cup pumpkin seeds
1 tsp margarine
300g dried or 500g fresh pasta

Cooking Instructions
Peel and roughly chop the pumpkin and onion. place the pumpkin, onion, water and bay leaves in a microwave proof bowl. Cover and cook on high power for 8 - 10 minutes or until the pumpkin is tender. Remove the bay leaves. Pureé with the
pepper, nutmeg and sour cream. Finely chop the salami. Place the pumpkin seeds and margarine in a small dish, cover and cook on high power for 2 - 3 minutes. Cook the pasta according to the instructions on the packet. Drain. Serve onto a serving dish and pour over the hot pumpkin sauce. Sprinkle with the salami and pumpkin seeds. Parmesan cheese or grated cheddar cheese is also nice when sprinkled over the top.
