Sticky Maple & Quinoa Chicken Drumsticks

Ingredients

  • 1 tbs sesame oil
  • 1 cucumber, sliced
  • 1 small cos lettuce, leaves separated
  • 1/4 cup rice wine vinegar
  • 1 tbs chilli sauce
  • 2 1/2 tbs maple syrup
  • 2 tbs reduced-salt soy sauce
  • 2 tbs sesame seeds
  • 1/4 cup quinoa flakes
  • 8 chicken drumsticks
  • 4 cloves garlic, crushed

Method

  1. Remove skin from drumsticks and discard. Mix vinegar, maple syrup, sauces, oil and garlic in a large non-reactive bowl. Add drumsticks and toss to coat. Marinate for 4-6 hours or overnight.
  2. Preheat oven to 200°C. Line a roasting pan with baking paper. Place drumsticks and marinade in pan and bake for 40 minutes, turning halfway, or until cooked through.
  3. Meanwhile, heat frying pan over medium heat. Add quinoa and sesame seeds and toast, stirring, for 3-4 minutes or until toasted and golden.
  4. Scatter quinoa mix over drumsticks and serve with lettuce, cucumber and relish.
  5. Serve with tomato, date & apple relish.
