Beef and Vegetable Noodles

For a hearty weeknight meal, you can rely on this stir-fry with beef, noodles and lots of vegetables.

You can swap out the meat for another protein like chicken, pork, or even prawns!


  • 2 beef schnitzel (300g)
  • 1 Tbsp polyunsaturated oil
  • 1 onion, finely chopped
  • 2 carrots, finely sliced
  • 1 cup broccoli florets
  • 4 - 5 mushrooms
  • 2 stalks celery, sliced
  • 3/4 cup water
  • 1 Tbsp cornflour
  • 2 Tbsp soy sauce
  • 1 Tbsp black bean
  • 1 packet of noodles

  1. Cook the noodles according to manufacturer's instructions, but do not use the flavour sachets. Drain.
  2. Cut the schnitzel into thin strips. Heat the oil in a large pan and sauté the meat until browned on the outside but still pink on the inside. Remove the meat from the pan and keep warm.
  3. Sauté the vegetables until tender but still slightly crisp, keep the pan moist by adding a little water.
  4. Blend the water, cornflour, soy sauce, and black bean sauce together.
  5. Return the meat to the pan, add the drained noodles and soy sauce mixture. Stir together and heat until well mixed and warmed.
