Crispy Chicken Thighs With Lemon Herbs

This slow cooker chicken recipe is easy to make and incredibly delicious. The chicken thighs end up tender with tasty crispy skin, while the potatoes below are infused with flavour.

Ingredients

  • 35g sachet French onion soup
  • 600g small red washed potatoes
  • 2 tbs continental parsley leaves
  • 2 lemons
  • 2 tbs extra virgin olive oil
  • 1 tbs thyme leaves
  • 1 garlic clove
  • 6 chicken thigh cutlets
  • 1/2 cup grated parmesan

Method

  1. Zest 1 lemon and combine with French onion soup. Juice zested lemon, slice remaining lemon and set both aside. Rub chicken with soup mixture and set aside.
  2. Place potato into a 6-litre slow cooker. Combine oil, garlic, thyme and lemon juice in a jug. Season with salt and pepper. Pour over potato and toss well to coat. Lay chicken, skin-side up, in a single layer on top of potato, adding lemon slices between chicken.
  3. Cover and cook on high setting for 3 1/2 - 4 hours or until chicken is cooked through. To serve, sprinkle over parmesan and parsley.
