Asian-Style Mandarin Chicken

Ingredients

  • 1 clove garlic, crushed
  • 1 tsp sesame oil
  • 1 tsp ginger, finely grated
  • 1/3 cup mandarin juice (plus peel, cut into fine strips to serve)
  • 1 tbs spring onions, chopped (to serve)
  • 1/4 cup soy sauce
  • 1 tbs peanut oil
  • 1/2 cup brown sugar
  • 6 chicken thigh fillets, sliced
  • 2 cup medium grain white rice, steamed (to serve)

Method

  1. Combine sugar, soy sauce, mandarin juice, garlic, ginger and sesame oil in a large bowl. Add chicken and stir to coat. Marinate for 15 minutes.
  2. Heat peanut oil in a large frying pan over medium-high heat. Add chicken to pan, reserving marinade, and cook for 5 minutes each side or until golden. Transfer to a plate.
  3. Drain any fat from pan. Add reserved marinade to pan, return to the heat and bring to the boil. Return chicken and cook for 5 minutes or until cooked through. Top chicken with mandarin peel and spring onion. Serve with steamed rice.
