Chicken Satay
Marinated chicken with a peanut sauce is perfect for lunch or dinner!
Serve this with steamed jasmine or Coconut Rice!
Ingredients
- 2 garlic cloves, crushed
- 100g crunchy 100% peanut butter
- 2 tbsp reduced-salt soy sauce
- 1 long red chilli, finely diced
- 400g chicken breast fillets, sliced into long strips
- 1 tbsp olive oil
- 315g mixed salad
- 4 cups sliced cucumber
- 2 cups cooked brown rice
- 2 limes, cheeks cut from each, to serve
Method
- In a medium bowl, mix together garlic, peanut butter, soy and chilli. Add chicken and stir to coat. Thread chicken onto skewers.
- Heat oil in a large chargrill pan over medium heat. Add skewers and cook for 4-5 minutes, turning, or until charred and cooked through.
- Toss salad kit together with dressing and cucumber. Divide salad and brown rice among plates, top with skewers, and serve with lime.
