Beef Rice Paper Rolls

Ingredients
- 1 pkt rice paper sheets
- 1/2 cup bean sprouts
- 1 carrot, grated
- 1/2 cucumber, cut into matchsticks
- mint leaves, to garnish
- hoisin sauce, to serve
- crushed peanuts, to serve
- 400g leftover barbecued steak, sliced
- 1 avocado, sliced
Method
- Fill a large bowl with lukewarm water. Soak one sheet of rice paper in water for 10 seconds, remove and layer with portions of steak, avocado, cucumber, carrot and bean sprouts. Roll, tucking in sides, to form a spring roll. Repeat with remaining rice paper and ingredients.
- Garnish spring rolls with mint leaves and serve with hoisin sauce topped with crushed peanuts.
