Charred Asparagus With Caper & Mustard Dressing
This super easy asparagus recipe is full of flavour. The tangy capers and mustard dressing is so versatile you can use it on chicken, seafood or steak.
Ingredients
- 5ml olive oil cooking spray
- 4 bunches asparagus, trimmed
- 1 tbs wholegrain mustard
- 1/2 lemon, zested, juiced
- 1/4 cup Woolworths extra virgin olive oil
- 1 tbs drained baby capers
- 1 tbs chopped gherkins
- 1/4 bunch continental parsley, leaves picked, finely chopped
Method
- Spray a large chargrill pan with oil and heat over high heat. Cook asparagus, in batches, turning, for 5 minutes or until tender. Transfer to a plate. Cover to keep warm.
- Meanwhile, place mustard, zest, lemon juice and olive oil in a small bowl and whisk to combine. Season with pepper. Stir in remaining ingredients. Serve asparagus topped with caper dressing.
