Satay Beef with Broccoli Fried Rice
Something fresh and healthy the whole family will love.
Ingredients
- 1 head broccoli, stems peeled, chopped, cut into small florets
- 1 bunch baby bok choy, stems and leaves shredded separately
- 1 tbs ginger, finely grated
- 1/4 cup kecap manis
- 1/4 cup crunchy peanut butter
- 1/2 tsp chilli flakes, dried (optional)
- 1 lemon, 1 tbs juiced
- 250g microwave jasmine rice
- 2 tbs peanut oil
- 500g beef rump steak
Method
- Slice steak into 1cm strips across the grain. Marinate in 1 tbs each of the oil and kecap manis. Thread beef onto 12 soaked bamboo skewers.
- Combine remaining kecap manis with peanut butter and chilli flakes in a small saucepan. Whisk in 1/3 cup boiling water and stir over low heat until liquid simmers. Remove from heat and stir in lime or lemon juice.
- To make broccoli fried rice, heat remaining oil in a wok or pan over high heat. Add broccoli, rice and ginger and stir-fry for 2 minutes or until fragrant. Add bok choy stems and stir-fry for a further 2 minutes. Toss through bok choy leaves until just wilted.
- Heat a chargrill pan or barbecue grill on high. Cook beef skewers for 3-4 minutes, turning once, or until well browned and sticky.
- Serve skewers atop broccoli fried rice and spoon over satay sauce.
