Jack-O-Lantern Halloween Cookies

Create these hellish Halloween cookies in the shape of Jack-o-lanterns with this easy recipe.

Customise with different faces, fill with crushed boiled lollies and bake!

Ingredients

  • 110g unsalted butter, softened
  • 1/2 cup caster sugar
  • 1 free range egg
  • 2 cups plain flour, plus extra for dusting
  • 1/4 cup cornflour
  • 70g boiled lollies, finely crushed

Method

  1. 1. Preheat oven to 200°c/180°c fan-forced. Line 2 large baking trays with baking paper.
  2. 2. Using electric beaters, beat butter and sugar for 5 minutes or until light and fluffy. Add egg and beat until combined.
  3. 3. Sift flours over butter mixture, then combine on low speed for 2 minutes. Turn dough out onto a lightly floured surface and form into a disc. Wrap in plastic wrap and refrigerate for 20 minutes.
  4. 4. Using a floured rolling pin, roll dough until 1cm thick. Use an 8cm spiderweb shaped cookie cutter to cut 24 shapes from dough, then place 2cm apart on trays. Bake for 10 minutes, then cool completely on trays.
  5. 5. Using a floured rolling pin, roll dough out until 1cm thick. Using a pumpkin-shaped cookie cutter, cut 18 shapes from dough, then place 2cm apart on trays. Cut out halloween faces and a small hole at the top. Fill gaps in faces with lollies.
  6. 6. Bake for 11 minutes, then cool completely on trays and serve.
