Mini Easter Layer Cake
Ingredients
- 1/4 jar Cottees raspberry jam
- 200ml Thickened Cream (whipped)
- 1 pkt Vanilla Cake Mix
- 62g Cadbury Mini Eggs
Method
- Prepare and cook vanilla cake mix according to pack instructions.
- Trim the top of the cake so it is flat, then cut approximately 5 circles out of cake using a scone cutter or round cookie cutter.
- Cut each circle in half. Spread jam onto each of the circles, then dollop (or pipe) on a little of the cream. Stack 3 layers per mini cake.
- Top with mini eggs to serve.
