Peanut Patties
Simple, delicious and full of peanuts!

These wholesome peanut patties are best served in a burger or with a fresh salad.

  • 155g unsalted roasted peanuts
  • 1 ½ cups cooked brown rice
  • 1 medium chopped onion
  • 1 Tbsp oil
  • 2 Tbsp smooth peanut butter
  • 2 Tbsp of chutney
  • 1 ½ tsp curry powder
  • 2 Tbsp olive oil

  1. Blend or process peanuts and rice until finely chopped.
  2. Add onion and 1 Tbsp of oil, peanut butter, chutney and curry powder and process till combined. Refrigerate the mixture for at least 30 minutes.
  3. Using lightly floured hands, shape the mixture into 8 patties. Heat remaining oil in large frying pan, add patties and cook for about 5 minutes or until brown on both sides.
