Simple Sweet-Chilli Chicken & Noodles
This Asian-inspired Traybake is a great idea for a family night dinner.
Ingredients
- 2 tbs coriander leaves (to serve)
- 500g fresh hokkien noodles
- 1 roast chicken
- 3/4 cup sweet chilli & ginger stir-fry sauce
- 1 tbs white sesame seeds (to serve)
- 1 tbs soy sauce
- 2 tsp peanut oil
- 350g stir-fry asian blend
Method
- Preheat oven to 180°C.
- Empty noodles into a bowl and cover with boiling water. Set aside for 5 minutes to soften. Meanwhile, cut chicken into 8 serving sized pieces, discarding seasoning.
- Drain noodles. Return to bowl. Toss through oil and soy sauce. Transfer to a roasting pan. Layer Stir Fry Asian Blend over noodles and top with chicken. Spoon stir-fry sauce over and sprinkle with sesame seeds. Bake for 15 minutes.
- Divide noodles, vegetables and chicken between serving dishes. Top with coriander and serve.
