Slow-Cooker Pulled Pork Rolls

These burgers are all about the wow factor. Treat yourself to restaurant-style smoky pulled pork burgers at home with this easy slow cooker recipe.
Ingredients
- 2.3kg boneless roast pork shoulder
- 1/2 cup smoky barbecue sauce
- 2 tbs smoked paprika
- 1/2 punnet thyme, leaves picked
- 1 tbs garlic powder
- 900g American bbq coleslaw
- 12 bread rolls extra soft jumbo
- 2 Lebanese cucumbers, thinly sliced
- 2 long red chillies, thinly sliced
- 1/4 bunch coriander, sprigs picked
Method
- Place pork in a 5.5L slow cooker. Combine sauce, paprika, thyme and garlic powder in a small bowl. Brush pork with sauce mixture. Close lid and cook on low for 8 hours or until pork starts to fall apart.
- Remove pork from slow cooker and transfer to a board. Using 2 forks, roughly shred pork. Skim fat from cooking liquid in slow cooker. Return pork to slow cooker and stir to coat.
- Prepare coleslaw kits according to packet instructions.
- Place coleslaw, pork, cucumber, chilli and coriander on roll bases. Sandwich with roll tops and serve
