Speedy Sausage Pasta

Want to put those leftover sausages from last night's BBQ to good use? Throw together this sausage pasta in just minutes.

Ingredients

  • 2 cloves garlic, crushed
  • 1 pinch dried chilli flakes
  • 1 small head broccoli, divided into small florets
  • 1/3 cup basil leaves, roughly torn
  • 1 lemon, finely grated rind and juiced
  • 2 tbs parmesan, grated (to serve)
  • 500g penne
  • 6 chicken sausages
  • 2 tbs olive oil

Method

  1. Cook pasta in a large pan of boiling salted water according to packet directions. Add broccoli for the last 3 minutes of cooking time.
  2. Meanwhile, heat half the oil in a large frying pan over medium-high heat. Add sausages and cook, turning frequently, for 5 minutes or until golden. Remove from pan. Reduce heat to low. Slice sausages and return to pan with garlic, chilli and lemon rind and cook, stirring, for a further 3-4 minutes or until sausage is cooked through.
  3. Use a slotted spoon to transfer broccoli to pan with sausages. Drain pasta and add to frying pan along with remaining oil and lemon juice. Season to taste with pepper, then stir over medium heat for 1-2 minutes or until heated through. Serve topped with basil and grated parmesan.
