Speedy Tuna Pasta Salad
Ingredients
- 500g Woolworths spirals
- 1/4 cup Greek-style yoghurt
- 1 tbs tomato sauce
- 1 tbs extra virgin olive oil
- 2 small yellow capsicums, deseeded, chopped
- 2 tomatoes, chopped
- 1 Lebanese cucumber, chopped
- 1/2 red onion, finely chopped
- 425g canned tuna in springwater, drained, flaked
- 1/2 bunch dill, roughly chopped
- 1 bunch spring onions, white part only, thinly sliced
Method
- Cook pasta in a saucepan of boiling, salted water for 8 minutes or until al dente. Drain. Refresh under cold water, then drain.
- Meanwhile, combine yoghurt, sauce and oil in a large bowl. Season.
- Add pasta, capsicum, tomato, cucumber, red onion, tuna, dill and spring onion to yoghurt mixture and gently toss to combine. Season. Serve sprinkled with extra dill.
