Strawberry & Lemonade Scones


  • 3 cup self-raising flour, plus extra for dusting
  • 1 cup thickened cream
  • 1 punnet strawberries, plus extra to serve
  • 1 tsp vanilla bean paste
  • whipped cream and jam, to serve
  • 1 cup cold lemonade

  1. Preheat oven to 200°C. Grease and line baking tray with baking paper.
  2. Stir flour, cream, lemonade and vanilla in a bowl until just combined. Add strawberries and fold through.
  3. Turn out onto a floured surface. Gently press out until 5.5cm thick. Use a 5.5cm plain cutter, dusted in extra flour, to cut into rounds. Place rounds on tray, so they are slightly touching. Bake for 20-22 minutes or until lightly golden.
  4. Cool slightly on tray then halve and serve with whipped cream, jam and extra strawberries.
