15-Minute Mexican Chicken Burgers
Looking for a tasty burger recipe? Try these flavour-packed Mexican chicken burgers. All you need are four ingredients and 15 minutes to whip up this easy meal.
Ingredients
- 500g Chicken Breast Fillets
- 35g taco seasoning
- 450g coleslaw kit
- 4 jumbo bread rolls, split, toasted
Method
- Cut each chicken fillet in half horizontally to form 2 thin fillets. Rub seasoning over both sides of chicken.
- Heat 2 tbs extra virgin olive oil in a large frying pan over medium-high heat. Cook chicken for 4 minutes on each side or until cooked through. Transfer chicken to a plate and cut each in half crossways.
- Meanwhile, toss coleslaw with dressing from kit in a bowl until combined.
- Top roll bases with coleslaw and 2 chicken pieces. Sandwich with roll tops and serve.
