Baked Pork Chops
These pork chops are tender, juicy, and will be a firm family favourite. Enjoy with Sticky Apple Sauce.
Ingredients
- 1 bunch globe onions, quartered
- 1 Royal Gala apple, thinly sliced on the round
- 2 tbs extra virgin olive oil
- 4 pork loin chops
- 1/4 cup rosemary sprigs
Sticky Apple Sauce
- 50g pitted dates, chopped
- 1 onion, chopped
- 3 Royal Gala apples, roughly chopped
- 1 tbs Dijon mustard
- 2 tbs extra virgin olive oil
- 1 tsp sea salt flakes
- 1/4 cup rosemary leaves
- 1 1/2 cup cloudy apple juice
- 1 clove garlic
Method
- Preheat oven to 250°C. Drizzle base of roasting pan with half the oil. Add onion, cut-side down. Roast for 5 minutes.
- Meanwhile, heat remaining oil in a frying pan over high heat. Cook pork for 8 minutes, turning over halfway, or until golden. Add pork, apple and rosemary to roasting pan with onion. Roast for a further 5-8 minutes or until pork is cooked through and apple is golden. Serve with Sticky apple sauce (see recipe).
Sticky Apple Sauce
- Preheat oven to 200°C.
- Combine all ingredients in a roasting pan. Bake for 30 minutes or until apples are tender and golden.
- Transfer to a food processor or blender and blend until almost smooth. Transfer to a sterilised jar and store in the fridge for up to 1 month.
