Banana Bread & Butter Pudding
A delicious traditional dessert
Banana's are a great addition to a bread & butter pudding. They add sweetness and are low in Saturated Fat, Cholesterol and Sodium.
Ingredients
- 3 medium bananas, peeled and sliced into 2cm rounds
- 3 Tbsp lemon juice
- 3 Tbsp marmalade
- 3 thick slices white bread, crusts removed
- 3-4 Tbsp butter, softened
- 2 eggs
- 1 1/2 cups milk
- 2 Tbsp sugar
- 1 tsp ground cinnamon
Method
- Pre-heat the oven to 180°C.
- Toss the banana in the lemon juice to prevent discolouration.
- Place on the base of a 20cm x 17cm baking dish.
- Dot with the marmalade.
- Butter the bread and cut into 3 cm cubes. Place on top.
- Beat the eggs, milk and sugar and pour over the pudding.
- Allow to soak for 15 minutes. Dust with the cinnamon.
- Bake the pudding for 30-40 minutes, until puffed and set.
