Banana Bread & Butter Pudding

Banana Bread Butter Pudding
A delicious traditional dessert

Banana's are a great addition to a bread & butter pudding. They add sweetness and are low in Saturated Fat, Cholesterol and Sodium.


  • 3 medium bananas, peeled and sliced into 2cm rounds
  • 3 Tbsp lemon juice
  • 3 Tbsp marmalade
  • 3 thick slices white bread, crusts removed
  • 3-4 Tbsp butter, softened
  • 2 eggs
  • 1 1/2 cups milk
  • 2 Tbsp sugar
  • 1 tsp ground cinnamon

  1. Pre-heat the oven to 180°C.
  2. Toss the banana in the lemon juice to prevent discolouration.
  3. Place on the base of a 20cm x 17cm baking dish.
  4. Dot with the marmalade.
  5. Butter the bread and cut into 3 cm cubes. Place on top.
  6. Beat the eggs, milk and sugar and pour over the pudding.
  7. Allow to soak for 15 minutes. Dust with the cinnamon.
  8. Bake the pudding for 30-40 minutes, until puffed and set.
