Easy Banana Cake
Make the most of ripe bananas with this easy recipe for banana cake topped with a delicious cream cheese frosting.
Ingredients
- 4 medium ripe bananas, mashed
- 3 free range eggs
- 1/3 cup extra virgin olive oil
- 2 tbs maple syrup
- 1 tsp vanilla paste
- 1 1/4 cup brown sugar
- 1 1/2 cup self-raising flour
- 1 1/2 tsp ground cinnamon
Cream cheese frosting
- 250g cream cheese, softened
- 1 cup icing sugar mixture, sifted
Method
- Preheat oven to 180°C/160°C fan-forced. Grease and line base and side of a 20cm round cake pan with baking paper.
- Place banana, eggs, oil, maple syrup, vanilla and sugar in a large bowl and whisk to combine. Sift over flour and cinnamon, then stir until well combined. Spoon mixture into pan, smooth top and bake for 1 hour 5 minutes or until a skewer inserted into centre comes out clean. Stand cake in pan for 10 minutes, then transfer to a wire rack to cool completely.
- To make the cream cheese frosting, use an electric mixer to beat cream cheese until smooth. Add icing sugar and beat until well combined. Place cake on a plate, spread with frosting and serve.
