Easy Banana Cake

Make the most of ripe bananas with this easy recipe for banana cake topped with a delicious cream cheese frosting.

Ingredients

  • 4 medium ripe bananas, mashed
  • 3 free range eggs
  • 1/3 cup extra virgin olive oil
  • 2 tbs maple syrup
  • 1 tsp vanilla paste
  • 1 1/4 cup brown sugar
  • 1 1/2 cup self-raising flour
  • 1 1/2 tsp ground cinnamon
Cream cheese frosting
  • 250g cream cheese, softened
  • 1 cup icing sugar mixture, sifted

Method

  1. Preheat oven to 180°C/160°C fan-forced. Grease and line base and side of a 20cm round cake pan with baking paper.
  2. Place banana, eggs, oil, maple syrup, vanilla and sugar in a large bowl and whisk to combine. Sift over flour and cinnamon, then stir until well combined. Spoon mixture into pan, smooth top and bake for 1 hour 5 minutes or until a skewer inserted into centre comes out clean. Stand cake in pan for 10 minutes, then transfer to a wire rack to cool completely.
  3. To make the cream cheese frosting, use an electric mixer to beat cream cheese until smooth. Add icing sugar and beat until well combined. Place cake on a plate, spread with frosting and serve.
