Healthier Butter Chicken

Try this delicious Indian dish with tender chicken in an amazing, creamy tomato curry sauce.


  • 140g no added salt tomato paste
  • 1 chilli, finely chopped
  • 1/2 bunch coriander, chopped
  • 2 cm piece ginger, finely grated
  • 1 brown onion, diced
  • 1 tbs garam masala
  • 1 tsp turmeric
  • 400g diced Italian tomatoes
  • 2 cup microwave brown rice, cooked
  • 320g chicken breast
  • 1 tbs olive oil
  • 2 garlic cloves, crushed
  • 1 1/2 cup light Greek-style yoghurt
  • 4 tbs natural sliced almonds

  1. Heat olive oil in a non-stick frying pan over medium heat. Add garlic, ginger, chilli and onion and sauté for 1-2 minutes or until translucent.
  2. Add spices and cook, stirring, for 1 minute or until fragrant. Add chicken and stir for 4 minutes or until cooked through.
  3. Add tomato paste and diced tomatoes and simmer for 3 minutes or until thickened. Stir in almonds.
  4. Serve with rice, topped with yoghurt and sprinkled with coriander.
