Healthier Butter Chicken
Try this delicious Indian dish with tender chicken in an amazing, creamy tomato curry sauce.
Ingredients
- 140g no added salt tomato paste
- 1 chilli, finely chopped
- 1/2 bunch coriander, chopped
- 2 cm piece ginger, finely grated
- 1 brown onion, diced
- 1 tbs garam masala
- 1 tsp turmeric
- 400g diced Italian tomatoes
- 2 cup microwave brown rice, cooked
- 320g chicken breast
- 1 tbs olive oil
- 2 garlic cloves, crushed
- 1 1/2 cup light Greek-style yoghurt
- 4 tbs natural sliced almonds
Method
- Heat olive oil in a non-stick frying pan over medium heat. Add garlic, ginger, chilli and onion and sauté for 1-2 minutes or until translucent.
- Add spices and cook, stirring, for 1 minute or until fragrant. Add chicken and stir for 4 minutes or until cooked through.
- Add tomato paste and diced tomatoes and simmer for 3 minutes or until thickened. Stir in almonds.
- Serve with rice, topped with yoghurt and sprinkled with coriander.
