Lemon & Garlic Hasselback Potatoes With Sage

These hasselback potatoes are super tasty as they're loaded with lemon, garlic and sage. Try this recipe for a twist on classic roasted potatoes.

Ingredients

  • 8 medium washed white potatoes, halved
  • 1/3 cup extra virgin olive oil
  • 1 lemon, zested and juiced
  • 1 bunch sage, leaves picked
  • 4 garlic cloves, thinly sliced

Method

  1. Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.
  2. Place a potato, cut-side down, on a chopping board. Place a bamboo skewer on each side of potato to prevent knife from going all the way through when slicing. Using a sharp knife, slice potato vertically into 5mm slits. Repeat with remaining potato and arrange on tray. Drizzle with half of the oil, season and bake for 1 hour or until almost tender. Combine remaining oil and lemon zest in a small bowl.
  3. Press sage and garlic randomly into potato slits, and drizzle over lemon oil. Bake for 20 minutes or until sage and potato are golden and crisp. Drizzle with lemon juice. Serve.
