Slow Cooker Pulled Chicken
Juicy pulled chicken thighs cook quicker than pork for the perfect pulled filling for tacos, quesadillas or your favourite Mexican dish.
Ingredients
- 12 chicken thighs, boneless, skinless
- 4 tbs chipotle paste
- 1 bunch coriander, fresh, chopped, stalks included
- 2 medium red onions, peeled and sliced
- 3 cloves garlic, peeled and minced
- 1 tbs smoked paprika
- 3 medium limes, juice and zest
- 1/3 cup chicken stock, made with 1 stock cube
- 3/4 cup passata
- 2 tbs maple syrup
- 1 bunch coriander, fresh, chopped, stalks included
Method
- Place the chicken thighs, chipotle paste, smoked paprika, onions, garlic, lime juice and zest, stock, passata and maple syrup in the slow cooker, stir in half of the coriander and the stalks and stir well.
- Cook on high for 4 hours, until the meat pulls apart easily. Serve scattered with fresh coriander.
