Mango Crumb Bars

These crumbly bars are filled with fresh mangoes, then baked to perfection.

Delicious dessert and sweet treat that is fruity, crumbly and perfect for the Spring and Summer!

Ingredients

  • 2 ½ cups ripe mangoes
  • (small chunks) 2-3 mangoes
  • 3-5 Tbsp sugar
  • ½ Tbsp cornstarch
  • 2 cups flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¾ cup cold unsalted butter
  • ²⁄₃ cup brown sugar
  • 1 large egg
  • ½ tsp vanilla extract

Method

  1. Pre-heat oven to 170⁰C Fan Forced.
  2. Cut the mangoes into small chunks and combine with the sugar and cornstarch. Mix well and set aside.
  3. In a large bowl, combine flour, baking powder, and salt, and cut the cold unsalted butter into chunks and add to the flour mixture. Mix until a breadcrumb-like texture is formed.
  4. Mix the remaining ingredients together separately. Then combine with the buttery dry flour mix.
  5. Take 2/3 of the mixture and press into the bottom of an 8” x 8” baking pan lined with parchment paper.
  6. Then add the mango mixture, and spread it out evenly.
  7. Then sprinkle the top with the rest of the crumbles.
  8. Bake in the oven for 35-40 minutes.
  9. Remove from the oven and let it cool for 5-10 minutes. Then lift the parchment paper and bring pastry out from the pan. Let it cool for another 15-20 minutes.
  10. Cut into 9 square bars. Serve and enjoy!
