Nic Nat Nachos

Ingredients

  • 1/2 avocado, mashed
  • 2 tsp lemon juice
  • 1 small tomato, diced
  • 1/4 green capsicum, finely sliced
  • 1/2 small carrot, shredded
  • 1 cup zucchini, grated
  • 1/2 cup canned no added salt red kidney beans, drained
  • 100g unsalted natural corn chips
  • 1/4 cup canned corn kernels, drained
  • 1/2 cup canned crushed tomato
  • 250g low fat beef mince
  • 2 tbs natural yoghurt
  • 2 tsp olive oil
  • 1/3 cup reduced fat tasty cheese, grated

Method

  1. Heat oil in a small frying pan over medium heat.
  2. Add mince and cook for 5 minutes until well browned.
  3. Add zucchini, beans and crushed tomato and cook for 5 minutes until vegetables are tender.
  4. Preheat grill to medium high.
  5. Pile corn chips onto a heatproof plate.
  6. Top with half of the cheese.
  7. Grill for 1-2 minutes until melted.
  8. Roughly mash avocado and lemon juice with a fork.
  9. Top corn chips with mince, tomato, corn, carrot, capsicum, remaining cheese, avocado and yoghurt.
