Pork, Pineapple & Coconut Stir-Fry

Ingredients

  • 1 red capsicum, deseeded and sliced
  • 1 bunch choy sum, roughly chopped
  • 1 tbs ginger, finely shredded
  • 1/4 pineapple, peeled, cut into chunks
  • 2 tbs oyster sauce
  • 3 cups jasmine rice, steamed (to serve)
  • 500g pork fillet, sliced
  • 3 garlic cloves, crushed
  • 2 tbs coconut oil
  • 2 tbs palm sugar

Method

  1. Heat oil in wok until smoking. Add the pork, garlic and ginger. Stir-fry until golden. Add oyster sauce and palm sugar and toss well to coat. Add capsicum, pineapple, spring onion and choy sum. Stir-fry for 1 minute.
  2. Serve stir-fry with jasmine rice.
