Slow-Cooked Corned Beef

An Irish favourite slow cooker recipe

Great flavour, and so easy to prepare!


  • 1.5kg piece corned beef
  • 1 large leek
  • 3 carrots, cut into thick lengths
  • 2-3 bay leaves
  • 2 Tbsp brown sugar
  • 8 whole black peppercorns
  • Water

  1. Wash the corned beef. Place in a slow cooker.
  2. Wash the leek well. Trim and cut into 4-5cm lengths. Add to the slow cooker together with the carrot and bay leaves.
  3. Sprinkle the meat with the brown sugar and peppercorns.
  4. Add enough water to almost cover the beef. Cover and cook on low for 6-7 hours.
  5. For a true Irish experience, serve with roast potatoes & cabbage.
