Place potato in a large saucepan, cover with cold water, and bring to the boil over high heat. Reduce heat to medium, then simmer for 20 minutes or until tender. Drain, return to pan, and mash until smooth. Set aside for 5 minutes, then refrigerate until cool enough to handle.
Transfer mashed potato to a large bowl. Add remaining ingredients, except oil, and mix well to combine. Using damp hands, divide and shape the mixture into 6 patties.
Heat oil in a large frying pan over medium heat. Cook patties for 4 minutes on each side or until golden brown.
