  • 1/3 cup barbecue sauce
  • 1 tbsp honey
  • 2 garlic cloves, crushed
  • 1/2 tbsp extra virgin olive oil
  • 600g sausages
  • 1 large red capsicum, quartered, deseeded, thinly sliced
  • 400g coleslaw
  • 1/3 cup coleslaw dressing
  • 1 Lebanese cucumber, cut into thin strips
  • 60g baby spinach leaves
  • 4 wholemeal Lebanese bread rounds, warmed

  1. Combine sauce, honey, and garlic in a small bowl.
  2. Heat oil in a large frying pan over medium-high heat. Cook sausages and capsicum, turning, for 8 minutes or until cooked through. Remove capsicum from pan. Add honey mixture and cook for 2 minutes, turning sausages to coat in sauce.
  3. Meanwhile, combine coleslaw and dressing in a bowl. Season.
  4. Place coleslaw, sausages, capsicum, cucumber, and spinach on bread and roll to enclose filling, then serve.
