Air-fryer Zucchini Fries

Whip out the air fryer for this recipe for crunchy, golden air-fried zucchini chips. Served with a fresh zucchini tzatziki, it's the ultimate snack.


  • 1/2 cup plain flour
  • 1 free range egg, lightly beaten
  • 3/4 cup dried breadcrumbs
  • 1 tsp garlic powder
  • 30g parmesan, finely grated
  • 4 zucchini, halved crossways, cut into wedges
  • 5ml olive oil cooking spray
  • Zucchini tzatziki:
  • 1 zucchini, grated
  • 3/4 cup light Greek-style yoghurt
  • 1 garlic clove, crushed
  • 1 lemon, zested, juiced
  • 2 mint sprigs, leaves picked, roughly chopped (plus extra leaves to serve)

  1. Preheat air fryer to 200°C.
  2. Place flour and egg in 2 separate bowls. Combine breadcrumbs, garlic powder and parmesan in a medium bowl. Working in batches, toss zucchini in flour, dip in egg and then coat in crumb mixture. Place half of the crumbed zucchini in air-fryer basket. Spray with oil. Cook for 8 minutes or until golden. Repeat with remaining crumbed zucchini and oil.
  3. To make the zucchini tzatziki, combine all the ingredients in a small bowl. Top with extra mint and season with pepper. Serve with zucchini fries.
