Carrot Mac Cheese Bites

Make snack time fun and also healthier with this nutritionally approved recipe. Carrot filled mac and cheese bites will be the new go-to savoury treat.


  • 2 tbs extra virgin olive oil
  • 1 large brown onion, coarsely grated
  • 3 medium carrots, coarsely grated
  • 1/3 cup plain flour
  • 3 cups milk
  • 1 cup Italian inspired cheese
  • 3 cups cooked macaroni
  • 1 bunch chives, finely chopped

  1. Preheat oven to 200°C/180°C fan-forced. Grease a 12-hole, 1/3-cup capacity muffin pan.
  2. Heat oil in a large saucepan over medium heat. Cook onion and carrot for 10 minutes, stirring, or until softened. Sprinkle over flour, then stir for 1 minute or until combined. Gradually add milk, stirring to combine. Bring to a simmer, then cook for 10 minutes or until mixture has thickened. Remove pan from heat. Fold in cheese, macaroni and three-quarters of the chives until cheese has melted. Spoon mixture into muffin pan. Sprinkle with half of the remaining chives.
  3. Bake for 25 minutes or until golden brown. Cool in pan for 10 minutes. Serve topped with remaining chives.
