Banana & Green Goodness Muffins

These muffins are an easy, healthy, freezer-friendly breakfast recipe!


  • 120g baby spinach leaves
  • 2 small, very ripe bananas
  • 1/2 cup vegetable oil
  • 1 free-range egg
  • 2 tsps honey
  • 1/2 cup milk
  • 1 1/3 cups wholemeal plain flour
  • 1 tsp baking powder
  • 1/4 tsp bicarbonate of soda

  1. Preheat oven to 180°c. Line a 12-hole muffin tray with paper cases.
  2. Blend spinach leaves in a blender until finely chopped. Add bananas, vegetable oil, egg, and honey, blending until smooth. Transfer to a bowl and stir in milk, flour, baking powder, and bicarbonate of soda.
  3. Spoon into cases. Bake for 25 minutes or until cooked and golden.
