Banana & Green Goodness Muffins

Ingredients
- 120g baby spinach leaves
- 2 small, very ripe bananas
- 1/2 cup vegetable oil
- 1 free-range egg
- 2 tsps honey
- 1/2 cup milk
- 1 1/3 cups wholemeal plain flour
- 1 tsp baking powder
- 1/4 tsp bicarbonate of soda
Method
- Preheat oven to 180°c. Line a 12-hole muffin tray with paper cases.
- Blend spinach leaves in a blender until finely chopped. Add bananas, vegetable oil, egg, and honey, blending until smooth. Transfer to a bowl and stir in milk, flour, baking powder, and bicarbonate of soda.
- Spoon into cases. Bake for 25 minutes or until cooked and golden.
