Cheese and Broccoli Soup

A perfect option for those colder days!

Enjoy this great soup with some crusty bread.

Ingredients

  • 2-3 cups chicken stock
  • 2 potatoes
  • 1 carrot
  • 1/2 cup melted butter
  • 1/2 cup flour
  • 2 cups milk
  • 1 broccoli head (size of fist)
  • 175g cheddar, grated
  • Pinch salt and pepper

Method

  1. Heat the chicken stock to boiling point. Cut the carrots and potatoes into bite-size pieces then add to the stock. Place lid on the pot and leave to simmer while you make the creamer.
  2. Cook the melted butter and flour, using a whisk, over medium heat for 3-5 minutes. Stir constantly and add the milk.
  3. Cut and add the broccoli to the chicken stock. Add salt and pepper to taste.
  4. Mix all the ingredients together and simmer on a low heat for 20 minutes, stirring every so often.
  5. Add the cheddar and stir.
  6. Remove from heat and blend together with a stick blender.

Handy Tips

Add a dollop of sour cream to serve
