Cheese and Broccoli Soup
A perfect option for those colder days!
Enjoy this great soup with some crusty bread.
Ingredients
- 2-3 cups chicken stock
- 2 potatoes
- 1 carrot
- 1/2 cup melted butter
- 1/2 cup flour
- 2 cups milk
- 1 broccoli head (size of fist)
- 175g cheddar, grated
- Pinch salt and pepper
Method
- Heat the chicken stock to boiling point. Cut the carrots and potatoes into bite-size pieces then add to the stock. Place lid on the pot and leave to simmer while you make the creamer.
- Cook the melted butter and flour, using a whisk, over medium heat for 3-5 minutes. Stir constantly and add the milk.
- Cut and add the broccoli to the chicken stock. Add salt and pepper to taste.
- Mix all the ingredients together and simmer on a low heat for 20 minutes, stirring every so often.
- Add the cheddar and stir.
- Remove from heat and blend together with a stick blender.

Add a dollop of sour cream to serve
