Crisp Salad with Pork Crackling & Pomegranate

Ingredients

  • 1 carrot, shredded
  • 2 Lebanese cucumbers, cut into matchsticks
  • 1 tbs ginger, grated
  • 6 radishes, thinly sliced
  • 4 spring onions, finely sliced
  • 1 cup pork crackling, broken
  • 1/4 cup lemon juice
  • 1/4 cup mirin
  • 75g pomegranate arils
  • 100g kale leaf and spinach
  • 1/3 cup soy sauce
  • 1 tsp caster sugar

Method

  1. Place spring onions into a bowl of iced water and set aside for 10 minutes. Whisk soy sauce, mirin, lemon juice, ginger and caster sugar together in a small jug.
  2. Combine salad leaves, cucumber, carrot and radish in a bowl. Drain spring onion and add to salad.
  3. Drizzle dressing over salad. Scatter with pork crackling and pomegranate arils. Serve immediately.
