Garlic Bread Pull-Apart with Broccolini & Cherry Tomatoes

Ingredients
- 450g frozen garlic bread
- 1/2 bunch continental parsley, chopped
- 1 punnet cherry tomatoes, thinly sliced
- 1 bunch broccolini, lightly blanched and chopped
- 1/2 tsp hot chilli flakes (optional, to taste)
- 2 1/2 cup mozzarella, shredded
Method
- Preheat oven to 180°C. Place each half of garlic bread butter side-up in a casserole or baking dish, and slice mostly through into 8 pieces per loaf.
- Cover with half the mozzarella, then tomatoes and broccolini, then top with remaining mozzarella. Generously season with salt and pepper, then sprinkle with chilli flakes.
- Bake for 15-20 minutes, or until cheese is golden and garlic bread is crisp on outer edges. Remove from oven. Sprinkle with parsley, cut into portions and serve.
