Garlic Bread Pull-Apart with Broccolini & Cherry Tomatoes

Ingredients

  • 450g frozen garlic bread
  • 1/2 bunch continental parsley, chopped
  • 1 punnet cherry tomatoes, thinly sliced
  • 1 bunch broccolini, lightly blanched and chopped
  • 1/2 tsp hot chilli flakes (optional, to taste)
  • 2 1/2 cup mozzarella, shredded

Method

  1. Preheat oven to 180°C. Place each half of garlic bread butter side-up in a casserole or baking dish, and slice mostly through into 8 pieces per loaf.
  2. Cover with half the mozzarella, then tomatoes and broccolini, then top with remaining mozzarella. Generously season with salt and pepper, then sprinkle with chilli flakes.
  3. Bake for 15-20 minutes, or until cheese is golden and garlic bread is crisp on outer edges. Remove from oven. Sprinkle with parsley, cut into portions and serve.
