Great creative idea for Halloween! Fun to make, and so many mixes can be used, and alternative stuffing mixes!


  • 4 peppers
  • vegetable oil
  • 1 cup of chopped onion
  • 1 clove garlic, minced
  • 2 tsps chilli powder
  • 450g of mince/pattie or meatball mixture
  • 1 cup of cooking sauce (ideally tomato)
  • 1 cup of cooked rice or couscous
  • 1/4 cup shredded cheese

  1. Begin by preheating your oven to 170 degrees. Using a sharp knife, slice off the top of each pepper (keep the tops!) and remove all the seeds from inside. Then using a knife cut out little triangle eyes and a mouth for your Jack O’ Lantern face.
  2. Heat and lightly oil a large frying pan. Start by cooking the onion, garlic, chili powder and mince/pattie or meatball mixture for 4-5 minutes or until cooked. Then add the sauce and simmer for a further 3 minutes. Take the pan off the heat and carefully stir in the cooked rice/couscous.
  3. Place the peppers on a lightly greased oven tray. Spoon the mixture into the peppers. Sprinkle with cheese. Top with the reserved pepper tops. Then bake in the oven for 40 minutes or until the peppers are tender.
