Nectarine, Peach, Chicken & Baby Cos Salad

Ingredients

  • 1 orange, juiced
  • 2 tbs extra virgin olive oil
  • 1 tsp mild Indian curry powder
  • 500g chicken breast, poached or grilled
  • 2 yellow nectarines, halved, destoned, cut into wedges
  • 2 yellow peaches, halved, destoned, cut into wedges
  • 1/3 cup hazelnut kernels, toasted, roughly chopped
  • 120g baby spinach & rocket
  • 1 baby cos lettuce, leaves separated
  • 4 slices wholegrain sourdough (to serve)

Method

  1. Place orange juice, oil and curry powder in a screw-top jar. Season, then secure lid and shake until well combined.
  2. Place chicken, nectarine, peach, hazelnuts, rocket and lettuce in a large bowl and toss to combine. Divide among plates, drizzle with dressing and serve with wholegrain sourdough.
