Nectarine, Peach, Chicken & Baby Cos Salad
Wedges of sweet and juicy nectarines and peaches on a bed of crispy baby cos lettuce make this summery chicken salad sing.
Ingredients
- 1 orange, juiced
- 2 tbs extra virgin olive oil
- 1 tsp mild Indian curry powder
- 500g chicken breast, poached or grilled
- 2 yellow nectarines, halved, destoned, cut into wedges
- 2 yellow peaches, halved, destoned, cut into wedges
- 1/3 cup hazelnut kernels, toasted, roughly chopped
- 120g baby spinach & rocket
- 1 baby cos lettuce, leaves separated
- 4 slices wholegrain sourdough (to serve)
Method
- Place orange juice, oil and curry powder in a screw-top jar. Season, then secure lid and shake until well combined.
- Place chicken, nectarine, peach, hazelnuts, rocket and lettuce in a large bowl and toss to combine. Divide among plates, drizzle with dressing and serve with wholegrain sourdough.
