Easy Sausage & Onion Tacos
Ingredients
- 1 large avocado, sliced
- 2 large tomatoes, sliced
- 3 brown onions, thinly sliced
- 10 small flour tortillas
- 1 lime, cut into wedges (to serve)
- 1 tbs lemon juice
- 40g baby spinach
- 2 tbs olive oil
- 5 WW Angus beef & caramelised onion sausages
Method
- Drizzle sausages with 1 tbs oil. Heat a barbecue or grill pan over high heat. Cook sausages for 7-8 minutes or until almost cooked through. Halve sausages lengthways. Cook cut-side of sausages until browned and cooked through.
- Meanwhile, heat 1 tbs of the oil on barbecue flat plate or in a large frying pan over medium- high heat. Cook onions, stirring occasionally, for 7-8 minutes or until golden and caramelised.
- Lightly warm tortillas on barbecue or grill pan until pliable.
- Slice sausages. Fill tortillas with spinach, tomato, avocado sliced and sprinkled with lemon, sausage and onion. Serve with your favourite sauce and lime wedges.
