Easy Sausage & Onion Tacos


  • 1 large avocado, sliced
  • 2 large tomatoes, sliced
  • 3 brown onions, thinly sliced
  • 10 small flour tortillas
  • 1 lime, cut into wedges (to serve)
  • 1 tbs lemon juice
  • 40g baby spinach
  • 2 tbs olive oil
  • 5 WW Angus beef & caramelised onion sausages

  1. Drizzle sausages with 1 tbs oil. Heat a barbecue or grill pan over high heat. Cook sausages for 7-8 minutes or until almost cooked through. Halve sausages lengthways. Cook cut-side of sausages until browned and cooked through.
  2. Meanwhile, heat 1 tbs of the oil on barbecue flat plate or in a large frying pan over medium- high heat. Cook onions, stirring occasionally, for 7-8 minutes or until golden and caramelised.
  3. Lightly warm tortillas on barbecue or grill pan until pliable.
  4. Slice sausages. Fill tortillas with spinach, tomato, avocado sliced and sprinkled with lemon, sausage and onion. Serve with your favourite sauce and lime wedges.
