Prosciutto Wrapped Chicken Potatoes

Golden Chicken Drumsticks wrapped in Prosciutto make this an extra tasty dish!


  • 1/4 cup continental parsley leaves, chopped
  • 500g baby white potatoes
  • 1/2 cup pitted Sicilian olives
  • 410g basil & garlic tomatoes
  • 8 small chicken drumsticks
  • 4 slices prosciutto, halved lengthways
  • salad leaf mix, to serve

  1. Cook potatoes in microwave, following packet instructions or until tender. Cut larger potatoes in half.
  2. Meanwhile, preheat the oven to 190°C. Pour tomatoes into a shallow baking dish and place in oven to heat. Wrap one strip of prosciutto around each drumstick. Add drumsticks, potatoes and olives to dish with tomatoes. Bake for 40-45 minutes or until chicken is golden and cooked through. Season to taste, sprinkle over parsley and serve with salad.
