Cook potatoes in microwave, following packet instructions or until tender. Cut larger potatoes in half.
Meanwhile, preheat the oven to 190°C. Pour tomatoes into a shallow baking dish and place in oven to heat. Wrap one strip of prosciutto around each drumstick. Add drumsticks, potatoes and olives to dish with tomatoes. Bake for 40-45 minutes or until chicken is golden and cooked through. Season to taste, sprinkle over parsley and serve with salad.
