Prosciutto-Wrapped Chicken & Potatoes
Golden Chicken Drumsticks wrapped in Prosciutto make this an extra tasty dish!
Ingredients
- 1/4 cup continental parsley leaves, chopped
- 500g baby white potatoes
- 1/2 cup pitted Sicilian olives
- 410g basil & garlic tomatoes
- 8 small chicken drumsticks
- 4 slices prosciutto, halved lengthways
- salad leaf mix, to serve
Method
- Cook potatoes in microwave, following packet instructions or until tender. Cut larger potatoes in half.
- Meanwhile, preheat the oven to 190°C. Pour tomatoes into a shallow baking dish and place in oven to heat. Wrap one strip of prosciutto around each drumstick. Add drumsticks, potatoes and olives to dish with tomatoes. Bake for 40-45 minutes or until chicken is golden and cooked through. Season to taste, sprinkle over parsley and serve with salad.
