Sticky Maple & Quinoa Chicken Drumsticks
Ingredients
- 1 tbs sesame oil
- 1 cucumber, sliced
- 1 small cos lettuce, leaves separated
- 1/4 cup rice wine vinegar
- 1 tbs chilli sauce
- 2 1/2 tbs maple syrup
- 2 tbs reduced-salt soy sauce
- 2 tbs sesame seeds
- 1/4 cup quinoa flakes
- 8 chicken drumsticks
- 4 cloves garlic, crushed
Method
- Remove skin from drumsticks and discard. Mix vinegar, maple syrup, sauces, oil and garlic in a large non-reactive bowl. Add drumsticks and toss to coat. Marinate for 4-6 hours or overnight.
- Preheat oven to 200°C. Line a roasting pan with baking paper. Place drumsticks and marinade in pan and bake for 40 minutes, turning halfway, or until cooked through.
- Meanwhile, heat frying pan over medium heat. Add quinoa and sesame seeds and toast, stirring, for 3-4 minutes or until toasted and golden.
- Scatter quinoa mix over drumsticks and serve with lettuce, cucumber and relish.
- Serve with tomato, date & apple relish.
