Tray Bake Chicken Fajitas
Ingredients
- 1 avocado, thinly sliced
- 1 fresh jalapeno chilli
- 1 red capsicum, thinly sliced
- 1 yellow capsicum, thinly sliced
- 1/2 cup fresh coriander sprigs
- 1 red onion, cut into thin wedges
- 600g chicken breast fillets, thinly sliced
- 8 flour tortillas, warmed
- 1 1/2 tbs lime juice
- 2 lime wedges (to serve)
- 200g Greek-style yoghurt
- 30g taco seasoning
- 2 tbs olive oil
Method
- Preheat oven to 220°C. Line a large baking tray with baking paper.
- Lay chicken on tray and drizzle with half the oil. Sprinkle with seasoning and toss to coat. Add capsicum and onion to tray. Drizzle with remaining oil. Bake for 20-25 minutes or until chicken is cooked through and vegetables are tender.
- Meanwhile, slice jalapeño. Combine half with yoghurt and juice in a small bowl. Top chicken with avocado, coriander and remaining jalapeño. Serve with yoghurt, warm tortillas and lime wedges.
