Stuffed Baked Potatoes
Lots of great ideas for one of our most loved vegetables - The Potato.
Ingredients
- 4 medium potatoes
- Seasoning of your choice
- 4 Tbsp of milk
- 100g Cheese
- Potato filling of your choice (we recommend diced bacon, corn, red onion, mushrooms, capsicum or chives)
Method
Cooking The Potato
- Turn your oven to 200°C. Scrub potatoes until clean. Using a skewer/fork stab each potato 6 times. Place potatoes on an oven tray and bake for about 60 minutes or until soft.
Making The Filling
- Cut a baked potato in half, scoop out the middle, place in a bowl, and mash it with a tablespoon of milk. Mix in the prepared filling ingredients.
- Pile back into the potato skins. Grate a little cheese over the top.
- Re-heat in the microwave for 2 minutes or in the oven for 10 minutes.
Handy Tips
To microwave: Scrub potatoes until clean. Using a skewer/fork stab each potato 6 times. Each medium-sized potato takes about 3-4 minutes to cook on high power; so two potatoes will take about 6-8 minutes. Place potatoes on a paper towel and stand for two minutes.
