Sink your teeth into this delicious breakfast bagel burger that features smoky bacon, eggs, and avocado.

Ingredients

  • 4 rindless middle bacon rashers
  • 1 tbsp extra virgin olive oil
  • 4 free-range eggs
  • 1 avocado, halved, deseeded, peeled
  • 1 lime, juiced
  • 1/2 tsp Tabasco sauce
  • 4 white bagels, split, toasted
  • 1/3 cup onion relish

Method

  1. Heat a large frying pan over medium-high heat. Add bacon and cook for 4 minutes on each side or until golden and crisp. Transfer to a plate lined with a paper towel.
  2. Heat oil in the same pan over medium-high heat. Crack eggs into the pan and cook for 4 minutes or until cooked to your liking.
  3. Meanwhile, using a fork, lightly mash the avocado in a bowl. Add lime juice and tabasco, then stir to combine. Season.
  4. Spread bagel bases with avocado mixture, then top with bacon, eggs, and relish. Sandwich with bagel tops and serve.

Handy Tips

We’ve made our breakfast burgers with chewy bagels, but they’d be just as delicious made using Turkish bread, seedy wholegrain rolls, or a buttery brioche.
